Mac N Cheese Recipe
From Rachael's home to our AA Kitchen comes this Mac N Cheese recipe! Originating with Rachael's grandmother, Eleanor, it has been passed down through generations, from her mom and now, to us.
Ingredients:
32 oz elbow macaroni
16 oz block of sharp cheddar cheese
16 oz block of mild cheddar cheese
1 stick of butter
½ cup of milk
2 eggs
Tabasco
Seasonings (see quote below)
“This is soul food, there are no set seasonings and can be made to the cook’s liking. Typically, I would use black pepper, seasoning salt, garlic powder, and onion powder.”
Steps:
Preheat oven to 350 degrees.
Grease a standard size baking dish with butter to prevent sticking.
While the oven preheats, cook noodles according to package directions until al dente.
Melt the stick of butter and combine with milk, eggs, and 2-10 dashes of tabasco, depending on your spice tolerance. Season to your liking.
Grate all blocks of cheese and combine.
In the greased dish, start with a later of the butter, egg, milk mixture, add noodles and cheese. Layer mixture, noodles, cheese, with the top layer being cheese.
Tent a piece of foil over the top to ensure the cheese doesn't stick.
Bake for approximately 30 minutes or until you can smell it (courtesy of my grandmother)
If you like a crispier top, take foil off for last 5 minutes of baking.
Cool for 10 minutes and enjoy!
